Spanish Vegetable Stew with Rice and Fried Egg Recipe

Pisto is very traditional Spanish dish very similar to ratatouille. It is a vegetable stew, usually with onions, bell peppers, zucchini and tomatoes. To prepare it, you should follow carefully the order of ingredients and, of course, cook over low heat. This is a very versatile dish because you can serve it with rice and eggs, or as a side dish for a grilled steak, or fish. At my parents they often make large quantities of pisto during summer with vegetables from their garden. They make preserves and have pisto for the whole year. I also have some jars of my parent’s pisto, however I prepare my pisto by default when I have some of the vegetables in my fridge that need to be used very soon.

Ingredientes

  • 1 kg of tomatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large onion
  • 1 small zucchini
  • 1 bay leaf
  • 1 teaspoon sugar
  • Olive oil
  • Salt and pepper

Elaboración

  1. Peel the tomatoes, cut them in half horizontally and remove the seeds into a strainer to gather their juice.
  2. Then, chop them into small cubes. Save as much juice as you can. Even the juice in the cutting board.
  3. Peel, wash and chop the onion into squares. Also wash the peppers and zucchini and cut them into squares.
  4. In a skillet over medium-low heat, heat 4 or 5 tablespoons of olive oil.
  5. When the oil is hot, add the onion and peppers and sauté over low heat until onions are slightly transparent and tender.
  6. Add zucchini, stir and sauté 5 minutes.
  7. Stir in the diced tomatoes and their juice, the bay leaf and a teaspoon of sugar (which reduces the acidity of the tomatoes). Salt and pepper.
  8. Simmer for half an hour or more, depending on the amount of water in the tomatoes.
  9. It is done. Serve it as I love the most: with a fried egg, white rice and fresh French bread.

 

Sugerencias, trucos y consejos

  • To peel the tomatoes, slightly cut a cross in the base, dip them in boiling water for a minute, then cool immediately in iced water. Pull out the skin starting from the cross you have just made.
  • You can use canned tomatoes instead of fresh tomatoes, they are usually peeled, which facilitates the work.
  • You can also remove seeds of zucchini.
  • You can add other vegetables like a carrot or an eggplant.
