Roasted Marinated Rabbit With Rosemary, Orange and Maple Syrup Recipe

Today we welcome again to our dear friend the rabbit with this dish of roasted marinated rabbit with rosemary, orange and maple syrup. This is a very easy recipe that leaves a delicious taste in your mouth. Very different from other preparations of rabbit meat as in mustard sauce or even with garlic in Spain.

Ingredientes
- 4 rabbit legs
- 1 sprig of rosemary
- 1 orange
- 25 ml of maple syrup
- 3 or 4 shallots
- 25 ml of olive oil
- 2 cloves of garlic
- 1 or 2 bay leaves
- Salt and pepper
Elaboración
- Clean the rabbit legs, remove all traces of fat.
- Grate the orange zest, being careful not to take too much of the white part as it is bitter.
- Squeeze the orange.
- Peel and wash the shallots. Cut them into strips.
- Peel the garlic cloves and crush them a little with the flat side of a large knife.
- In a glass jar, add the orange juice, zest, olive oil, maple syrup, shallots, rosemary cut in half, garlic and bay leaves. Close tightly and shake well to mix flavors.
- Use this mixture to marinate the rabbit for at least 2 hours. Keep covered in the refrigerator.
- Preheat oven to 175 ° C, heat top and bottom.
- Remove the rabbit legs from the marinade, season with salt and pepper to taste on both sides.
- In a baking pan, place a layer of shallots, the rabbit legs, rosemary, bay leaf and garlic. Drizzle with a little marinade just to cover the shallots. Reserve remaining marinade.
- Bake at half maximum for 30 minutes. Halfway through cooking, baste again with a little more marinade, so the shallots are caramelized and do not burn.
- It is done. Serve one leg portion with caramelized shallots and some cooking sauce. Enjoy!
