Homemade French Fries Recipe

 

French fries are one of my favorite food since forever. Someone blames me for having become addicted to them. I perfectlyunderstand. Who has not suffer some kind of abstinence syndrome with fries? When it happens to me I always cook some fries following this recipe to make it disappear. They are perfect, crispy, without the need of using industrial precooked fries, that, as you might know they normally have less healthy fat.

To make perfect fries you just have to pay attention to five key points. Firstly, potatoes need to be specific for frying, it seems obvious, but this point is often overlooked. Secondly, wash them once you cut them, let them soak to remove the starch, as the latter prevents getting crispy fries, and dry them very well. Third, fry them in small batches. Fourth, let them cool completely. Finally, fry them again at a higher temperature, that will make them to be crispy outside and tender inside. Nothing else.

Ingredientes

  • 1 kg of potatoes, peeled or not, depending on your preference, but they need to be special for frying (bintje potatoes, for instance)
  • 1 l mild olive oil or sunflower
  • Salt

Elaboración

  1. Cut the potatoes into sticks, as regular as possible. For this step a potato slicer comes in handy.
  2. In a large bowl, wash the potatoes and drain the water.
  3. Repeat step 2 twice more .
  4. Soak the potatoes in cold water for about 10 minutes (at least).
  5. Drain the potatoes and dry them well with a clean kitchen towel very absorbent.
  6. Heat oil to 150°C.
  7. Fry 1/4 of the potatoes for 8 to 10 minutes. Stir a few times to avoid them to stick. Reserve.
  8. Repeat steps 7 and 8 three more times until you have fried all potatoes at 150°C.
  9. Let them cool at least 30 minutes. At this point you could freeze them and continue with the recipe later.
  10. Heat the oil to 185-190ºC.
  11. Fry 1/4 of the potatoes a couple of minutes or until browned to your liking. Stir a little to avoid them to stick. Reserve.
  12. Repeat steps 10 and 11 until you finish all the fries.
  13. Add salt to taste just before serving.
