Fresh Fig Clafoutis Recipe

 

Although almost everyone knows the cherry clafoutis, we can also prepare a fesh fig clafoutis, taking advantage we are in the season of this ephemeral fruit, so delicate and delicious. For those who do not know it, and even if the name does not give us any hint, the clafoutis is a very easy to prepare cake. Just bake the fruits covered with a mixture of eggs, flour, sugar and milk. In this fig clafoutis, unlike for the cherry clafoutis, instead of using the whole fruit, we are going to slice the figs so that they release their delicious juices while baking. That makes a delightful fig clafoutis.

Ingredientes

  • 7 or 8 ripe fresh figs
  • 100 g of all purpose flour
  • 100 g of white sugar
  • 4 medium eggs
  • 250 ml of whole milk
  • 1 vanilla pod
  • Icing sugar for decorating
  • Butter for greasing pan
  • Optional: 1 dash of aged rum

Elaboración

  1. Preheat the oven to 200°C/400ºF, heat top and bottom.
  2. Grease the baking pan with butter.
  3. Wash the figs, remove the stems and cut them into wedges.
  4. Distribute the wedges skin down on the entire base of the baking pan.
  5. Cut the vanilla bean in half lengthwise and scrape the seeds with a knife.
  6. In a large bowl, whisk eggs, sugar, flour and vanilla seeds.
  7. Gently pour the mixture over the figs. These ones do not necessarily have to be completely covered.
  8. Bake for 30 minutes or until edges are golden brown. You can check if it is ready piercing the center with a knife. If it comes out clean, the clafoutis is baking.
  9. Let it warm or cool down completely, depending on your liking.
  10. It is done. Just before serving, sprinkle with icing sugar. Enjoy!

 

Sugerencias, trucos y consejos

  • You can add a dash of rum to the mixture to give to this fig clafoutis an alcoholic twist.
  • You can replace some of the milk by cream for obtaining a creamier texture.
  • Instead of the vanilla pod, you can use 1 or 2 teaspoons of vanilla extract or replace some of the sugar by vanilla sugar.
  • You can serve this fig clafoutis accompanied by some whipped cream, a scoop of vanilla ice cream, and even sprinkled of flaked almonds.
