French fries are one of my favorite food since forever. Someone blames me for having become addicted to them. I perfectlyunderstand. Who has not suffer some kind of abstinence syndrome with fries? When it happens to me I always cook some fries following this recipe to make it disappear. They are perfect, crispy, without the need of using industrial precooked fries, that, as you might know they normally have less healthy fat.

To make perfect fries you just have to pay attention to five key points. Firstly, potatoes need to be specific for frying, it seems obvious, but this point is often overlooked. Secondly, wash them once you cut them, let them soak to remove the starch, as the latter prevents getting crispy fries, and dry them very well. Third, fry them in small batches. Fourth, let them cool completely. Finally, fry them again at a higher temperature, that will make them to be crispy outside and tender inside. Nothing else.

A mí madre le quedan crujientísimas y perfectas, doradas, pero no quemadas, y todo ese rollo que las hace inmejorables, yo nunca lo he consegido, al horno me quedan bien, crujientes incluso, pero fritas, entre que apenas lo intento, y que cuando lo he hecho me he pasado o quedado corta de fuego… Lo de lavarlas y secarlas lo hago siempre, porque vaya si se nota respecto a la gente que no lo hace… Pero lo de la doble fritura, que he visto muchas veces, al final nunca lo hago, ¡qué perezosa!
