Strawberry Soup Recipe

Imagine that you eat a dessert with strawberries, sweet strawberries, dipped in their juice, which denotes a light vanilla touch and, in addition, this dessert finishes your meal in a refreshing way. Well… if you like the idea, then you are going to love making this strawberry soup.

Ingredientes
- 500 g of strawberries, well washed, stemmed and cut lengthwise into quarters
- Juice of 1/2 lemon or lime
- 50 g of sugar
- 1 vanilla bean, cut in half lengthwise
Elaboración
- In a large bowl, mix all ingredients stirring gently.
- Cover the bowl with plastic wrap or and let macerate in the fridge for a couple of hour sso that the strawberr juice comes out.
- Once macerated, remove the vanilla bean and in a saucepan over medium heat , heat the strawberry mixture for about 3 or 4 minutes to thicken the strawberry syrup. No need to remove .
- Distribute the mixture in individual cups and allow them to cool.
- Where they are warm, keep them in the fridge for at least an hour before serving (you can cover them with plastic wrap to avoid mixing odors and flavors).
- Done. Serve chilled.
Sugerencias, trucos y consejos
- You can serve the strawberry soup with a scoop of vanilla ice cream or the flavor that you like most, or even topped with a little of whipped cream.
- You can adjust the amount of sugar as you like.
- You can add a few drops of vanilla extract instead of the vanilla bean or substitute a part of dugar by vanilla sugar.
- You can substitute vanilla for some mint leaves and macerate together with the strawberries. You must remove the mint just before cooking them.
- If you prefer, you can pass the strawberries through a Chinese strainer, once heated .
- With this recipe you can make a strawberry sauce that you can use to accompany other desserts such as a piece of cheesecake, for example. For this, initially cut into small squares the strawberries, once macerated, reduced the straeberries longer for a thicker syrup.
