Today, we have another salad. It is summer and these dishes are very convenient to take them to the beach. So, since I am staying beside the sea these days, I would like to describe my rice salad, which for me is one of the classic summer meals.
Summer Rice Salad Recipe

Ingredients
100 g long grain rice
2 cans of tuna in oil blend (80 g each)
25 cherry tomatoes
25 pitted green olives
1 red pepper
1 green pepper
1 red onion
5 tablespoons of sweet corn
1 medium sized cucumber
1 garlic clove
1 bay leaf
Fresh parsley, chopped, to taste
Olive oil
Sherry vinegar
Salt and pepper
Directions
Prepare white rice :
In a skillet over medium heat, heat 2 tablespoons of olive oil.
Once the oil is hot, brown the garlic, peeled and lightly crushed.
Add rice and bay leaf, stir. Then, pour the amount of water indicated on the package, usually twice the volume of rice.
Cook for 20 minutes over low heat.
Drain the rice and let cool. Once it is warm, keep it in the refrigerator for at least half an hour.
While the rice is cooling, prepare the other ingredients.
Peel, wash and chop the onion as small as possible. Marinate for 10 minutes with a good dash of vinegar.
Wash the peppers and cut them into small squares.
Drain the tuna and crumble it.
Peel the cucumber and cut into squares.
Wash the cherry tomatoes and cut them into wedges.
Cut olives in the same way.
Once the rice is cool, mix it with tomatoes, peppers, the cucumber, the onion, rinsed and drained, tuna, olives and sweet corn.
Finely chop the parsley leaves, previously washed and dry. Sprinkle and mix.
Add salt and pepper to taste. Season with 5 tablespoons of olive oil and 2 tablespoons of vinegar.
It is done. You can cool it 1 or 2 hours in the refrigerator if you want.
Hints, Tips, and Tricks
At the end, you can add 1/2 clove garlic, peeled, crushed and mixed with the oil.
You can add other ingredients of your choice such as black olives, diced ham, finely chopped celery, green peas…
The salad is much better if the rice is cold before mixing with the other ingredients, and also if you let it sit for 1-2 hours in the refrigerator before serving.
