Raviole Pizza Recipe

 

In the city centre of Grenoble, there is a small square occupied mostly by the terrace of a bar. Besides that bar, there is a small pizzeria where they make the best pizzas in the city centre. However, this pizzeria does not have room to eat inside, so either you order your pizza for takeaway or you place a small magnet with a number in the magnetic board at the entrance to mark the table on the terrace where you are. That guy has a good sense of business. Another good point is that that establishement offers pizzas topped with regional products like ravioles, the mini ravioli.

Pizza and pasta? Yes… The ravioles of Romans go very well on a pizza because they are very small, but they have an intense taste. An original pizza, isn’t it?. This pizza is not asomthing weird propose by one single site, you can also find it in other pizzerias. However, I normally order it in that pizzeria next to the bar to eat it in the middle of the square, on the terrace, with a good beer very cold.

Ingredients

• 1 pizza dough (click to see recipe )
• 2 tablespoons of sour cream
• 100 g grated emmental cheese
• 65 g of frozen ravioles de Romans (half portion)
• Chopped chives

Directions

1. First things first, preheat the oven to 250°C, top and bottom heat .
2. Roll out the pizza dough, leaving the edges a little thicker, so that the contents do not overflow on the oven.
3. Spread the cream around the base, without reaching the edges.
4. Now, sprinkle grated cheese and distribute the mini-ravioli.
5. Bake for about 12 minutes. Place the tray with pizza on the very botton of the oven.
6. Remove the pizza from the oven, sprinkle with chopped chives and serve immediately .

Hints, Tips, and Tricks

• Quantities are approximate. Add more or less depending on your taste.
• It is important in this pizza to form the edges so that they grow with the heat of the oven. This prevents the cream from overflowing.
• You can add other ingredients such as mushrooms, salmon, bacon, onion… and other kind of cheese, such as mozzarella or reblochon.
• You can substitute the crème fraîche by tomato sauce.
• For a homemade pizza almost professional, you can use a pizza stone . The pizza is cooked directly on the stone . This is very similar to cooking it in a stone oven and a wood fire.
