Pistachio Cake Recipe

I like very much this recipe for pistachio cake. It is always a success and at the same time it is so quick and so easy. I normally follow the directions that my friend Ruben’s mum taught me long ago. Every time I had breakfast at his place, there were always homemade cakes “to die for”. In addition, following this recipe your kitchen will remain clean because you can do everything in the same bowl. Just grind the pistachios very well, then mix with the remaining ingredients and bake. Easy, right? In less than 10 minutes, you will have baking a delicious pistachio cake soft and fluffy. So yummy!

Ingredientes

  • 200 g of peeled pistachios
  • 200 g of all purpose flour
  • 150 g of caster sugar
  • 3 medium eggs
  • 100 ml of whole milk
  • 30 ml of sunflower oil
  • 1 teaspoon of baking powder


Elaboración

  1. Preheat the oven to 180ºC, heat top and bottom.
  2. Grind the pistachios in a blender with 100 ml of milk until creamy.
  3. Mix flour, sugar and baking powder. Sift.
  4. Add three eggs, sunflower oil and pistachio cream. Whisk well.
  5. Butter and then flour a cake pan.
  6. Bake for 35 minutes or until the cake is cooked. To verify this, pierce with a toothpick or the a knife, if it does not comes out clean, bake for 2 or 3 minutes more and test again.
  7. Once it is baked, let it cool in the cake pan for 5 minutes or so. Then, remove it from the pan and let it cool on a wire rack.
  8. It is done. Enjoy!
