Kalismera! Today is time to share the recipe for Greek salad . The secret is in the dressing for Greek salad, which is made with garlic and oregano, as I said in the previous post. However, the dressing is not everything, crunchy cucumber slices and chunks of tasty tomatoes contrasting deliciously with good reading taste of the feta makes of it one of my favorite salads. All combined with peppers, olives and capers. So good!
Greek Salad Recipe (Horiatiki Salata)

Ingredients
4 ripe tomatoes
1 cucumber
1 green pepper ox horn
1/2 red bell pepper (optional)
1/2 red onion
200 g of feta cheese
1 tablespoon of capers
Black olives, possibly Kalamata, the Greek variety
Fresh parsley leaves, to taste
Greek salad dressing :
8 tablespoons of extra virgin olive oil
2 or 3 tablespoons of sherry vinegar
1 small clove of garlic
1/2 teaspoon of dried oregano
Salt and black pepper, to taste
Directions
Peel and wash the onion. Cut half of it into strips and marinate with a few drops of vinegar while preparing the remaining ingredients.
Wash the tomatoes thoroughly. Remove their stems and slice them into wedges.
Wash and slice the cucumber into slices of half a centimeter thick.
Wash the peppers. Remove the stalk, seeds and the white part inside. Cut them into strips.
Dice the feta cheese into small cubes of 1 cm square, or crumble it into pieces by hand.
Make the dressing:
Peel the garlic and remove the stem inside. Cut it into pieces and crush it in a mortar with a pinch of salt to make a paste.
In a glass jar with a tight fitting lid, add the extra virgin olive oil, sherry vinegar, garlic paste, the dried oregano and finally salt and pepper to taste.
Close and shake the jar vigorously until you obtain a smooth sauce.
Wash the parsley, dry it well and finely chop the leaves.
Rinse pickled onions and drain well.
Add all ingredients in a large bowl: tomatoes, cucumbers, peppers, onions, olives, capers, feta cheese, parsley and dressing. Thoroughly mix everithing.
It is done. Serve it immediately. Enjoy!

Greek salad generally contains no lettuce, but it is common in many countries out of Greece call Greek salad the one made with lettuce and some or all of the ingredients in this recipe. Especially with feta cheese, cucumber and black olives.
