Greek salad dressing is a sauce whose characteristic ingredients are garlic and oregano. Although you can finely chop the garlic, I prefer to crush it in a mortar to make a paste. That will give our vinaigrette an enhanced taste of garlic very present in mouth but not at all unpleasant. Who has never experienced to chew a small piece of garlic that masked all the other flavours of your bite?
