Greek salad dressing is a sauce whose characteristic ingredients are garlic and oregano. Although you can finely chop the garlic, I prefer to crush it in a mortar to make a paste. That will give our vinaigrette an enhanced taste of garlic very present in mouth but not at all unpleasant. Who has never experienced to chew a small piece of garlic that masked all the other flavours of your bite? The rest of the preparation of the dressing does not change, it consist of making an emulsion with all the ingredients as you would do it for a cocktail 😉

Serves: 4 Time: 5 m Difficulty: Easy

Ingredients

8 tablespoons of extra virgin olive oil
2 or 3 tablespoons of sherry vinegar
1 garlic clove, not too big
1/2 teaspoon dried oregano
Freshly ground black pepper, to taste
Salt, to taste

Directions

Peel the garlic clove. Cut in half lengthwise and remove the stem inside. Coarsely chop it into 4 or 5 pieces and place it in the mortar. Add a pinch of salt and mash it until you obtain a paste. The salt is used to prevent the pieces of garlic to get out from the mortar when hit with the pestle.
Place the garlic paste with the remaining ingredients in a glass jar with a tight lid.
Close the jar and shake it vigorously to emulsify the liquid ingredients and mix with the oregano leaves.
It is done. Use it to dress your Greek salad. Enjoy!

Hints, Tips, and Tricks

As the garlic will be eaten raw, remove the germ usually green or white to ease its digestion.
You can add a drizzle of lemon juice or even replace the vinegar by lemon.
You can also use other herbs like dill or basil minced.
If you wish, you can give it a spicy twist with a pinch of cayenne pepper or Chile powder.
Oil and vinegar amounts described in the recipe are the ones I usually use. However, feel free to adapt them to your taste, if you like with more vinegar, for example.
If you like this salad dressing with garlic and oregano, do not hesitate to use it not only for the Greek salad.
