Greek salad dressing is a sauce whose characteristic ingredients are garlic and oregano. Although you can finely chop the garlic, I prefer to crush it in a mortar to make a paste. That will give our vinaigrette an enhanced taste of garlic very present in mouth but not at all unpleasant. Who has never experienced to chew a small piece of garlic that masked all the other flavours of your bite? The rest of the preparation of the dressing does not change, it consist of making an emulsion with all the ingredients as you would do it for a cocktail 😉
