Ingredientes

  • 2 duck breasts
  • 2 ripe pomegranates
  • 1 tablespoon of honey
  • 1/2 teaspoon of cornstarch
  • 1/2 lemon
  • Freshly ground black pepper
  • Salt and pepper

  1. De-seed the pomegranates. Make a shallow incision around and separate them into two halves with your hands.
  2. On a large bowl, hold a half upside down and hit on the skin with a wooden spoon. The seeds will fall among your fingers. Repeat with the other halves.
  3. Now, turn the seeds into juice. For this, use a food mill. Reserve some of the seeds to garnish.
  4. Cook the duck breasts as described in the recipe by following the link. Let them set inside the parchment paper while you prepare the pomegranate sauce.
  5. Boil the pomegranate juice with a tablespoon of honey and a few drops of lemon juice. Let it reduce by half.
  6. Dissolve the cornstarch in a tablespoon of cold water and add to pomegranate sauce.
  7. Stir and continue cooking until the mixture thickens. Salt and pepper to taste.
