Hello! Today I bring you my recipe for the sandwich that is having a buzz on the USA. It turns out that I recently read the story that a well-known fast-food chain specialized in fried chicken had released a chicken sandwich and everybody is freaking out. There were even reports in the news and even the head of the company publicly apologized for not being able to meet the demand. Frankly, I was curious to try that sandwich and not living in the USA my only option was to make it for myself.

To prepare this famous fried chicken sandwich, what we are going to do is to take a couple of chicken breasts and cook them in the southern style. That is, macerated in buttermilk and then breaded and fried.

The buns used for this sandwich are brioche type. The final assembly is very simple. Few ingredients come inside the bread: the chicken, a spicy mayo and sweet and sour pickles. I leave you my sandwich verdict at the end of the article.

Ingredients

• 2 chicken breasts (*)
For the marinade:
• 1 cup of buttermilk
• 1 teaspoon of paprika
• 1 teaspoon of cayenne
• 1 teaspoon of salt
• ½ teaspoon of pepper
• 1 teaspoon of garlic powder
• 1 teaspoon of onion powder
• 1 teaspoon of hot sauce (Louisiana style)
For breading and frying:
• Canola Oil for frying
• 1 cup of all-purpose wheat flour
• 1 teaspoon of sweet paprika
• 1 teaspoon of cayenne
• 1 teaspoon of salt
• 1 teaspoon of pepper
• 1 teaspoon of garlic powder
• 1 teaspoon of onion powder
For the spicy mayo:
• 4 tablespoons of mayonnaise
• 1 teaspoon of cayenne
• Hot sauce to taste
• 1 teaspoon of garlic pouwder
For the sandwich:
• 2 brioche burger buns
• Sweet and sour pickled cucumber in slices
• Butter to spread the bread

Directions

1. First of all, mix all the ingredients of the marinade ingredients.
2. Make some cuts in the chicken breast, put them inside the marinade and let marinate overnight in the fridge (or at least 2 hours).
3. Deep fry the chicken. Mix all the dry ingredients for the breading. Remove the breasts from the marinade, coat them with flour generously, put them back in the marinade again and coat them with flour again. Try to press well the chicken into the flour so that you form thick flaky layer of flour. Let rest.
4. Heat the oil in a high pan 350 ° F.
5. When it is very hot, deep fry the chicken breasts for 7 or 8 minutes, until golden brown to your taste on both sides. Once fried, let them stand on a rack for a few minutes.
6. While the chicken is frying, toast the bread. Cut the buns in half, spread them with butter and toast them in a pan over medium-high heat or broil them in the oven. Be careful not to burn them.
7. Prepare the sauce by mixing all the ingredients. Adjust the spicy level to your liking.
8. Make the sandwich. Spread the spicy mayo on both sides of the bread. Place a layer of sweet and sour pickles, then the chicken and put the other side of the bun.
9. And that’s it. Enjoy!

Hints, Tips, and Tricks

• Serve with fries or cajun fries as a side dish.
• Breasts can be with or without skinless. I like them with the skin on. I think is crispier.
• You can add a half of teaspoon of monosodium glutamate in the marinade as they do in fast food restaurants. I didn’t put this time because I didn’t have it in my pantry.
• You can use regular mayo instead of the spicy one.
