Pork Stew in Tomato Sauce Recipe

 

There is always a first time for everything. Like the first time my uncle asked me if I liked beer. “Huh… Let’s then go out and drink a beer together”. I remember my uncle took me to a bar in the city center of Cáceres, unfortunately I cannot remember exactly where, but there we ordered our first beer. With this beer, the waiter served us a big tapas of pork in tomate sauce and topped with homemade fries. It was very good ! So good that I still cannot give up associating the pork in tomato sauce to that first beer with my uncle.
Now, this recipe  of pork in tomato sauce is one of the dishes that I regularly take to work for lunch. It can be prepare in advance and reheated it is still very good. In addition, it very easy to make. You just have to simmer the pork in tomato and that is all.

Ingredientes

  • 500 g of lean pork , diced
  • 1.5 kg of tomatoes (or 800 g of peeled canned tomatoes)
  • 1 large onion, peeled and finely chopped
  • 2 garlic cloves, peeled, crushed and finely chopped
  • 2 bay leaves
  • 1 teaspoon of sugar
  • 4 tablespoons of olive oil
  • Salt and pepper

Elaboración

  1. Salt and pepper the meat.
  2. In a pan over medium heat, heat the olive oil.
  3. Brown the meat. Reserve.
  4. In the same oil , brown the garlic for a minute. Then add the onion and brown until it becomes transparent.
  5. Add the meat to the pan.
  6. Mix the peeled tomatoes in a blender and sift through a skimmer with a pestle.
  7. Add the sifted tomatoes into the pan with the bay leaves, and the teaspoon of sugar. Salt and pepper to taste.
  8. Cover and simmer for about one hour, stirring occasionally.
  9. Remove the lid and simmer for another half hour.
  10. When the meat is very tender and the sauce has thickened, the pork stew in tomato sauce is ready.

 

Sugerencias, trucos y consejos

  • If the tomato sauce becomes very dry is simmering covered, add some water .
  • You can add a dash of white wine and reduce it before adding the tomatoes in the pan.
  • Serve as tapas with fries, or as a main course with white rice as side dish.
