Two weeks ago or so, I was in the supermarket and run into a big column made of carton boxes. My curiosity made me look into the boxes and I saw that there were cherries inside. I couldn’t resist and that day I came back home with a big box of cherries. So, to celebrate the beginning of the cherry season, I made a cherry pie, like the one in Twin Peaks.
The hardest part of this recipe is to make the pastry, but this other recipe I published recently can come in handy. This point is no more a problem. Do not forget that you need to prepare and maintain the pastry as cool as you can. The remainder of the recipe is mix and bake. Well before that, you will need to pit the cherries, if you buy them fresh… anyway, that become easier ans easier while doing it… or you can buy them canned 🙂
