Vanilla Panna Cotta with Chesnut Honey Recipe

This summer I visited the Cevennes National Park, which has a part in the French department of Ardèche. There you can find a variety of chetnuts very appreciated France. In summer it is not yet thechestnut season, but you can already recognize the green balls with spikes used mainly for decoration. In this trip I bought a jar of chestnut honey, a package of chestnut flour and a large jar of canned chestnuts. I have not yet used the last two. However, I used chestnut honey to glaze a delicious vanilla panna cotta… You should try it. It is so good!

Vanilla Panna Cotta with Chesnut Honey Recipe

Ingredientes

  • 400 ml of whipping cream
  • 20 g of caster sugar
  • 2 gelatin leaves (unflavoured)
  • 1 vanilla bean
  • 4 tbsp of chestnut honey

Elaboración

  1. First, cut the vanilla bean in half lengthwise and scrape the seeds carefully with the end of a small knife.
  2. In a saucepan over medium heat, heat the wipping cream with the vanilla seeds and the bean for about 10 minutes, stirring constantly. Avoid boiling.
  3. Soak the gelatin leaves in cold water for about 5-6 mnutes.
  4. Remove the cream from the heat, remove the vanilla bean. Mix with sugar.
  5. Drain the gelatin leaves and add them in the cream. Stir well to allow to disolve completely.
  6. Distribute the mixture into ramekins or glasses.
  7. Let it warm, then store in the refrigerator for at least 4 hours.
  8. It is done. Just before serving, add a spoonful of chestnut honey to each. Enjoy!

 

Sugerencias, trucos y consejos

  • To make a lighter version of panna cotta, you can replace half of the whipped cream by whole milk. In this case, you must also add an extra leaf of gelatin.
  • You can speed up the process of cooling down the panna cotta by placing them in the freezer.
  • Bring the honey pot to the table in case you want to spoon some more.
  • The panna cotta can be served in individual glasses or be removed from the molds. To release them off from the molds, run the edges around with a small knife and invert into the plate.
  • If you prefer, you can always accompany the panna cotta with berries.
  • You can substitute the vanilla bean by vanilla extract.
