This tomato salad is one of the side dishes that I sometimes prepare when I have not much time to make dinner. It is quickly done and does not take more than five minutes at the same time that is very good, if you use the good quality tomatoes, of course.
Tomato Salad Recipe

Ingredients
3 tomatoes
1 garlic clove
Extra virgin olive oil
Sherry vinegar
Parsley, to taste
Salt
Directions
Wash the tomatoes and remove the stem cutting around with a knife.
Cut tomatoes in half lengthwise, then each half into 3 or 4 wedges, depending on the size of the tomatoes.
Peel the garlic, cut it in half lengthwise and remove the stem.
In a mortar, add the garlic coarsely chopped and a pinch of salt. Crush.
Wash the parsley and dry it well.
Cut the stems and take only the leaves.
Make a ball with the leaves and chop them. No need to do fine.
Add the chopped parsley into the mortar with the and garlic and continue to mash until you get small pieces.
Mix with 3 tablespoons of good quality extra virgin olive oil and 1 tablespoon sherry vinegar.
Place tomatoes in a large bowl and salt to taste.
Season with the garlic dressing you have just made.
It is done.
Hints, Tips, and Tricks
Use this salad to accompany grilled steak, an omelet, a toast with smoked salmon , a sandwich… or what you want.
This salad should be made with good quality tomatoes. Do not use the ones that taste like styrofoam.
I usually add salt to the tomatoes before dressing them to make them better acquire the taste of salt.
You can vary the amount of garlic to taste, and the quantities of oil and vinegar. The amounts in the recipe are the ones I normally use.
You can add some chopped green onions, both the white and green part. It is also good with red onion.
You can add other spices to the dressing, like some black pepper or a little of ground cumin.
Why not a hot twist? Add a pinch of chili powder or a red chili peppers, seeded and finely chopped.
