Tahini Recipe (Sesame paste for hummus)

Tahini or tahina is a sesame paste made from only sesame seeds and a little of oil. This is the essential ingredient for a delicious hummus or baba ghanoush, respectively chickpea and eggplant. dips It can also be used in sweet dishes, such as sesame halva, wich I like a lot with the pistachio.
Although you can buy tahini already prepared in specialized stores, I am not used to have it conditioning at home, because I use it only occasionally. However, I always have sesame seeds. That is why I prepare it just when I need it. Two tablespoons are enough to make hummus. Normally, I choose to use the mortar for a small quantity and the coffee grinder when I need a lot.

- 2 tablespoons sesame
- Olive oil

- In a skillet over medium heat, toast the sesame seeds until they are lightly browned. Do not forget to stir frequently to avoid burning the seeds.
- Place the toasted sesame seeds and still warm in a mortar and crush them until obtaining a thick paste.
- Add a little oil and keep working in the mortar until getting a smooth paste.
- It is done.

- You can use a coffee grinder to make the job much easier.
- Step 1 is not necessary if you use toasted sesame seeds.
- If you wish, you can also toast the sesame seeds in the oven. To do this, place a sheet of parchment paper on a baking and sprinkle the seeds. Bake for 5 minutes on the middle rack in the preheated oven at 180 ° C, heat in both sides.
- Use tahini for hummus, baba ghanoush, the sesame halva or just spread it on toast.
- You can also use it to make a sauce, for example with a few drops of lemon juice and a little of crushed garlic. You can use it to accompany falafel, brochettes… or whatever inspires you.
- For a sweet preparation you should use vegetable oil.

Ya somos dos. A mi me daba mucha pena ver un bote de tahína que me duraba hasta un año. Es un proceso más trabajoso, pero por lo menos se va haciendo lo que se va necesitando.
¿Recuerdas algunas recetas con grandes cantidades tahína de esa que comentas? Yo, a parte de las de la especie de turrones, no conozco ninguna más.
