An amateur chef Rose Water Syrup Panna Cotta Recipe

Some time ago I bought my first bottle of rosewater syrup to try a cocktail that used to order in a bar in Grenoble. I have only found this kind of syrup in gourmet stores around here. A little expensive, but it worths. So far I have only made two different things with it: the cocktail and this recipe of panna cotta. The cocktail it is great and the panna cotta even better. The latter is delicate like roses. Although I recommend to put only a little of coulis because otherwise you are going to lose the rose flavor inside the panna cotta, and… as you know… it is much better to eat roses than give them away 😉

Rose Water Syrup Panna Cotta Recipe

Ingredients

200 ml of heavy cream 30 % m . g .
50 ml of milk
50 ml of syrup of rosewater
2 sheets of gelatin
Icing sugar (to taste)
Raspberry or mixed berries coulis.

Directions

In a saucepan, mix the cream with milk and the syrup. Taste and adjust sugar and syrup to your liking.
Heat over medium heat, stirring occasionally and avoid boiling.
Meanwhile, soak in cold water two gelatin sheets for about 5 minutes.
Drain well the gelatine and add it to the cream when it is almost boiling.
Mix well and continue cooking for a couple of minutes, stirring carefully and avoiding the cream boils.
Remove from heat, fill in the dessert bowls and let them cool.
When they are almost cold, cover with plastic wrap and let in the refrigerator for about three or four hours (best overnight).
Before serving, mix a dash of rose syrup with the coulis of your choice and spoon a little on the panna cotta. Not too much, you do not want to lose the rose flavor.

Hints, Tips, and Tricks

It can be served on a glass or in a plate. For the latter, we introduce som time the panna cotta in very hot water to allow the edges to melt a bit and then pour it on the dish.
It can be accompaigned with red berries, pomegranates, lychees …
Use only flowers suitable for human consumption. The ones in flower shops do not trend to be.
