Raviole Quiche Recipe

This entry is another recipe with ravioles, the small ravioli taht are typical from Romans, a town near Grenoble. This time, they are presented as a quiche . The truth is, I have not seen this quiche out of Romans very often, it is not so easy to find, contrary to what happens with the raviole gratin. Nevertheless, this quiche has become one of my favorites since the first time I tried it, even though it may seem weird to make a quiche with pasta.
Preparing the raviole quiche is very similar to the preparation of a quiche lorraine. The only difference is that instead of bacon, ravioles are added. As for other preparation swith ravioles, they are frozen before use them to allow them to separate much easier.

Raviole Quiche Recipe

Ingredientes

  • 1 shrotcust pastry (recipe by clicking on this link)
  • 3 medium eggs
  • 200 ml of crème fraîche
  • 200 g grated emmental chesse
  •  350 g of raviole (half of the raviole recipe), frozen
  • 1 onion or the white part of a large leek, cut into small cubes
  • 2-3 tablespoons of olive oil
  • Nutmeg
  • Salt and pepper

Elaboración

  1. Roll the dough and bake in the oven (you can read the directions for this here)
  2. While the dough is in the oven , heat two tablespoons of olive oil in a skillet over medium-low heat. Brown the onion and reserve.
  3. In a bowl, whisk the eggs with the crème fraîche.
  4. Add the grated emmental cheese.
  5. Season with salt, pepper and  nutmeg.
  6. When the shortcut pastry is baked, remove it from the oven and distribute on it half of the onion and half of the ravioles.
  7. Pour in half of the eggs mixture over this first layer.
  8. Distribute the remaining onion and ravioles.
  9. Pour in the remainder of the egg mixture and spread well on the surface the remaining of the emmental cheese.
  10. Bake at 180ºC for 30-35 minutes in preheated oven, heat up and down.
  11. Let cool before serving

 

Sugerencias, trucos y consejos

  • Check that the quiche is already baked by piercing it with a knife. If the knife comes out clean, the quiche is ready.
  • Serve the raviole quiche with a green salad or a mixed salad for a complete meal .
  • This quiche can be made without onion.
  • You can use cream cheese instead of grated cheese, or our favorite grated cheese.
