Elaboración

  1. Make the bechamel [1].
  2. Deep-fry the potatoes in olive oil until they begin to brown.
  3. Stir occasionally to prevent burning the ones at the bottom, but carefully.
  4. Once the potatoes are fries, drain them thoroughly and place them on paper towels.
  5. Cover them also with paper towels to remove the excess oil on both sides.
  6. Salt potatoes to to taste.
  7. Preheat oven to 180ºC, heat up and down.
  8. In a baking dish, place some bechamel on the base.
  9. Make a layer of potatoes.
  10. Spoon some more bechamel on top of the potatoes and smooth the top.
  11. Repeat steps 5 and 6 until finish the potatoes.
  12. Sprinkle over some grated cheese.
  13. Bake the potatoes for 10 minutes in the preheated oven.
  14. Bake now on high temperature, heat only on top, until the surface becomes gold and brown.
