Pico de Gallo Recipe

The pico de gallo is a preparation from Mexico that is normally used as garniture. The most common version is this recipe, made with tomato, onion, chilli, coriander and lime. There are also other varieties, including those made with fruits.

Making pico de gallo is not difficult at all and also it does not take long. Just cut everything into small pieces and mix well. Although there is no secret in this recipe, I give you a “knack” that might be interesting for other preparations: how to remove the seeds from tomatoes. It is very easy, cut the tomatoes in half horizontally, rather than vertically. Doing it this way, you will see that with your finger you remove the seeds without any effort.

Ingredientes

  • 2 tomatoes
  • 1/2 onion
  • 1 jalapeno or serrano pepper (optional)
  • Juice of 1/2 lime
  • Coriander to taste
  • Salt

Elaboración

  1. Wash the tomatoes and remove the stem with a knife.
  2. Cut the tomatoes in half horizontally.
  3. Remove seeds from tomatoes with your finger.
  4. To dice the tomatoes, first cut the halves into slices, then each slice into cubes.
  5. Peel the onion, wash it and cut it in half. Cut one of the halves into small cubes.
  6. Wash the pepper and cut it into thin slices, remove the seeds.
  7. Wash the coriander leaves, form a ball and chop finely.
  8. Mix the tomatoes, half an onion, chilli and coriander in a bowl.
  9. Add salt to taste and then the lime juice.
  10. Stir, let stand a few minutes, and now it is done.

 

Sugerencias, trucos y consejos

  • For those who do not like spicy chili, it is optional. Remember that you can always adjust the level of spiciness according to your own taste.
  • You can eat pico de gallo directly with some tortilla chips, or use it to garnish many Mexican recipes like guacamole, nachos with cheese or chili, to prepare fajitas, huevos rancheros
  • You can also use pico de gallo as a base for other salads. For example, with shrimps, surimi and avocado.
  • You can replace the lime by lemon.
  • You can use other types of onions, such as red onion, or even spring onions.
  • Do not prepare too in advance to prevent it from losing its fresh flavor.
