Since I started the blog, there has been a recipe that my sister has always asked me to publish: Penne rigate with pate and sausage. A very simple dish of pasta which turned us crazy when we were children. However, we only liked this dish of pasta with penne rigate. Never with the smooth ones.
This recipe also includes the preparation of the tomato sauce for pasta. However, you can perfectly use premade tomato sauce so the recipe will be ready in a minute.

Penne Rigate with Sausage Recipe

Ingredientes
- 400 g of penne rigati
- 250 g of pork sausage, chicken or turkey, cut into slices
- 1 tablespoon of pork liver mousse
- 1 small onion, peeled and finely chopped (optional)
- 1 kg of tomatoes, washed, peeled and diced
- 1 bay leaf
- 1 teaspoon of sugar
- 2 tablespoons of olive oil
- Salt and pepper
Elaboración
- In a skillet over medium-low heat, heat the oil and brown the onion.
- Add the tomatoes, the bay leaf, salt & pepper and sprinkle with sugar.
- Cook for about 30 minutes, stirring from time to time.
- Remove the bay leaf and mix in the blender the tomato and onion sauce.
- Sieve the sauce through a stainless steel colander with a mortar.
- In a skillet over medium heat, brown the sausage with a few drops of olive oil.
- Add the tablespoon of pork liver mousse, stir and pour in the tomato sauce. Mix well and reserve.
- Cook the pasta according to packet directions.
- When the pasta is cooked, drain it well, mix with the sauce and serve.

- You can use premade tomato sauce.
- Sprinkle with your favorite grated cheese.
