Lentil soup with chorizo was the first stewed legumes dish that I learned after leaving my parents’ home to study at the university. As soon as the cold days came, I started to buy lentil soup with chorizo already premade. It was good but it was not my mother’s which I love it. So as soon as I got tired of buying canned lentils, I called Mom. We can say that prepare lentil soup with chorizo is very easy. Lentil and Chorizo Soup Recipe
Serves: 4 Time: 1 h 45 m Difficulty: Easy Ingredients 350 g of lentils 1 chorizo 1/2 onion 1/2 red bell pepper 1/2 green pepper 1 carrot 1 or 2 bay leaves 2 cloves of garlic 1 teaspoon of sweet paprika 1 ham bone (optional) A chicken carcass Olive oil salt Directions The night before, soak the lentils in cold water for at least 8 to 12 hours. The next day, wash the peppers, scrape the stem, remove the seeds and the white strips. Cut into strips and then into small squares. Wash and peel the onion. Chop into small squares. Peel the carrots. Peel the garlic cloves and smash a little with the flat of the blade of a large knife. Drain the lentils and rinse under cold water. Place the lentils in a saucepan and cover with 1 liter of cold water. Heat the pan over medium heat. As soon as the water boils, remove the foam with a spoon. Add remaining ingredients: peppers, carrots, onion, garlic, bay leaves, ham bone, chicken carcass and chorizo. When the water boils again, reduce heat to maintain a simmer. Two or three times during cooking, remove the foam. After half an hour, remove the chorizo and set aside. Also check if the carrot is tender an remove. Reserve both. Cook lentils. From one hour and a quarter, check if the lentils are already tender, according to your taste. Remove ham bone, chicken carcass, bay leaves and garlic. Replice the sliced chorizo and sliced carrot. Season with salt to taste. It is done. At the table, you can add to your lentils a few drops of vinegar. Enjoy! Hints, Tips, and Tricks You can prepare the lentils well in advance. Sometimes this soup is even better reheated. In the last minutes of cooking, you can add a sauce with chopped onion that is browned with a little oil, then add a tablespoon of flour and chopped tomatoes. Let it reduce and them mix and cook together for a few minutes. You can add a piece of bacon or pork ribs. You can also add a potato, peeled and washed that will be reserved as soon as it is tender. If you use small lentils maybe it will not be necessary to soak them the night before. If you already have a chicken stock, you can use it to make this lentil soup with chorizo. In that case, there is no need to add the chicken carcass and the ham bones.
