Hummus Recipe

I must admit that whenever I cook chickpeas I remember those days when I was starving and did not complain because we were having chickpeas at lunch. Yes, I hated chickpeas a lot when I was a child. Nowadays, I have found some recipes with chickpeas that I can say that I really like. Hummus is an example of that.

Hummus is a dish that comes from the Middle East, which consists of a mash of chickpeas and tahini. The latter is a paste of toasted sesame which gives the hummus its characteristic flavor. Traditionally this recipe was handmade, but today it is much easier with a food processor or blender. So, put all the ingredients in the machine and mix.

Ingredientes

  • 200 g of cooked chickpeas
  • 1 tablespoon of tahini
  • 1 garlic clove (small)
  • 1 tablespoon of olive oil and a little more to serve
  • Lemon juice
  • A pinch of cumin powder
  • Coriander
  • Paprika for dusting
  • Salt and pepper
  • Chickpea broth (optional)

Elaboración

  1. In the food processor, pour in the chickpeas, a tahini scoop, the garlic, the olive oil, a drizzle of lemon,  a litthe of chickpeas broth (or water), some cilantro leaves, cumin, a pinch of salt and pepper and mix.
  2. Taste and adjust spices to your liking.
  3. Mix again to get the texture to your liking. You can leave chickpeas chunks or make it very fine, the latter is how I like it.
  4. Serve in a bowl, sprinkle with chopped cilantro, paprika and a drizzle of olive oil on top.

 

Sugerencias, trucos y consejos

  • Eat with pita bread or vegetable stcks.
  • You can add other ingredients such as cheese or yogurt.
  • You can make the tahini yourself. Brown a couple of sesame tablespoons in a pan (without oil) and then smash it in a mortar until it becomes a paste. It takes a lot of time, but it can come in handy sometimes.
