Ingredientes

  • 2 ripe avocados
  • Pico de gallo (click for recipe)
  • 2 tomatoes, washed, without seeds and diced
  • 1/2 onion, peeled, washed and cut into tiny cubes
  • 1 jalapeno or serrano pepper (optional), washed and finely chopped
  • Juice of half a lime
  • Finely chopped cilantro to taste
  • Salt

Elaboración

  1. Prepare the pico de gallo: Combine all ingredients in a bowl.
  2. Cut in avocados in half lengthwise, remove the seed striking it with the blade of a knife, then twist and oull away.
  3. Empty the avocado flesh with a spoon and place in a shallow dish.
  4. Add a few drops of lime to the avocado to prevent oxidation.
  5. Mash the avocado with a fork until you get the consistency of a puree.
  6. Mix 3/4 pico de gallo with the mashed avocados.
  7. Just before serving, add a pinch of salt.
  8. It’s done. Serve it with the rest of the pico de gallo on top and accompanied with tortilla chips.

 

How to choose avocados

  • To choose perfectly ripe avocados, squeeze and check they should be slightly soft. You must also pay attention that the tail is not completely brown, if this is the case, it means that the avocado is too ripe.

  • Instead of serrano pepper, you can add a few drops of Tabasco to the mashed avocado.

  • You can replace the lime juice by lemon juice.
  • If you prepare it in advance, it is better to keep it in the refrigerator with a plastic film in direct contact with the guacamole.
  • Use the type of onion you like, such as red onion, or even spring onion.
  • No need to use a conditioned guacamole spice mix.
