Goat Cheese and Tomato Tarte Tatin Recipe

Tarte Tatin is a tart baked upside down. That means that to make it you neet to place the filling at the bottom of the mold and you cover it with the pastry. Usually it is prepared with fruits and eaten for dessert, being the most popular recipe with caramelized apples. However, we can prepare delicious salty versions like this tatin with tomatoes and goat cheese.

Serves: 4 Time: 1 h 30 m Difficulty: Easy

Ingredients

1 shortcrust pastry
120 g of flour
60 g of cold butter
1 medium egg
1 dash of milk
Salt and pepper
4 or 5 tomatoes, depending on its size
Goat cheese (your favorite)
1 small onion
Balsamic vinegar
Extra virgin olive oil
Fresh basil leaves
1 teaspoon of sugar
Salt

Directions

Prepare the pastry:
1. In a bowl, cut the butter into cubes and mix with the flour until you get a sandy consistency.
2. Add a pinch of salt, the egg and the dash of milk. Mix well.
3. Knead until you obtain a smooth dough. Do not knead too much so it does not become elastic.
4. Wrap it in plastic wrap and set aside in the refrigerator for at least half an hour.
In the meantime, wash the tomatoes, remove the stems with a knife and cut them into wedges.
Peel, wash and chop the onion in julienne (thin strips).
Slice the goat cheese.
In a circular baking dish, place the tomatoes, skin side down. At this moment, you might consider adding more tomatoes to make a tight layer.
Add salt to taste and sprinkle with a teaspoon of sugar.
Distribute the onion and some basil leaves on the tomatoes.
Add a dash of balsamic vinegar and a drizzle of olive oil.
Roll out the shortcrust pastri using a rolling pin on a floured surface. Cover the tomatoes with the pastry.
Make a small circle in the center and bake in preheated oven at 180°C for half an hour.
It is done. To serve, flip it on a plate to see the nice layer of tomates.

Hints, Tips, and Tricks

You can serve with a side salad.
You can replace the basil by the herbs you like, such as thyme, for example.
