These days, I do not have much time to cook and I normally cook something quick and not very complicated. This is the case of the spaghetti with garlic, oil and chilli. From Naples, this recipe is a classic pasta dish and its preparation is quite simple, not to say that it is probably the one with the easiest directions. In these spaghetis, the combination of garlic and oil is perfect, and even better with spicy chili. But, not too much, as I prefer not too spicy.

Garlic, Oil and Chili Spaghetti Recipe

Ingredientes
- 400 g of spaghetti (100 g per person)
- 4 garlic cloves, peeled, washed and sliced
- 2 red chilli peppers, washed and sliced (or more if you like it hot hot)
- Finely chopped parsley to taste
- 6 tablespoons of extra virgin olive oil
- Grated cheese for sprinkling (optional)
- Salt
Elaboración
- Bring to boil 3 or 4 liters of water in a large saucepan over high heat.
- While the water is warming up, prepare the other ingredients.
- When the water boils, add two tablespoons of salt and stir.
- Wait until the water starts to boil, then add the spaghetti.
- Cook the spaghetti according to package directions.
- Meanwhile, heat oil in a skillet over medium-low heat.
- When the oil is hot, add garlic and brown lightly.
- Then add the red pepper and sauté everything for a minute. Reserve.
- When the spaghetti is cooked, drain them and place them into a bowl.
- Add the preparation of oil, garlic and chili over the spaghetti and mix well.
- Sprinkle with finely chopped parsley and mix well.
- It’s ready. Serve immediately and in the table, sprinkle with your favorite cheese.
Sugerencias, trucos y consejos
- You can use cayenne pepper instead of red chilli pepper, or, even, a pinch of chili powder.
- Adjust the spicy level according to your liking. Hotness depends not only on the amount of chillies, but also on the cooking time in the oil with the garlic.
- Use the pasta cheese you prefer. As a suggestion, you can use Parmesan, Grana Padano, or pecorino.
