  2. Remove the stems and cut them in half lengthwise.
  3. Remove all the seeds and the white strips inside.
  4. Heat the olive oil in a skillet over medium-low heat.
  5. Crush each garlic clove with the flat of the blade of a large knife. Remove the skin and add them to the pan.
  6. When the oil is warming up, add the peppers.
  7. Fry them over medium-low heat until they begin to brown. Be careful not to burn them.
  8. Remove them from the oil with tongs.
  9. Now you can peel them or serve them with their skin. I prefer to leave the skin and that each guest decides.
  10. It’s ready. Serve them while still hot and put a salt shaker on the table so everyone can season them according to their liking. Enjoy!

Sugerencias, trucos y consejos

  • It is very important to dry very well the peppers before putting them in the warm olive oil.
  • Garlic is optional. If they begin to brown too much while frying the peppers, remove them.
  • Fried green peppers are great for eating them on a slice of your favorite bread, garnish meat like a good rib steak, Extremaduran Migas, a Spanish tortilla or as an ingredient in salads and of course, as we made time in Spain, serving them with French fries and fried eggs.
  • If you have too many peppers, you can still fry a good amount and, as in the case of Spanish tomato frito sauce, canning them. To do this:
    1. Get a few glass jars that can be closed tightly.
    2. Fill them with peppers already fried and frying oil still warm. Close the jars immediately after filling.
    3. Place them upside down to verify that the vacuum was done and that they were sealed.
