Eggplant with molasses is a typical tapas in southern Spain. It consists of fried eggplant that you can cut into sticks or rounds topped qith some drops of molasses. This is almost the only preparation in which I use molasses, but I like it. So only for that, I always have a pot in my pantry.
It must be said that molasses is a syrup made from sugar cane and is produced in certain regions of Andalusia. In Spain we call it “miel de caña” or cane honey. The first time I try this delicious tapas was in a restaurant next to the beach during my first visit to the Andalusian coast. I started in Cadiz and ended in Cabo de Gata. I really recommend it, I have good memories of this Andalusian road trip, not as food memories;-)

Fried Eggplant With Molasses Recipe

Ingredientes
- 1 eggplant
- Molasses
- 1 Beer
- Flour
- Olive oil
- Salt
Elaboración
- Wash the eggplant, dry it and remove the stem.
- Cut the eggplant into slices lengthwise, 1 cm thick. No need to be too accurate. Then cut each slice into sticks of 1 cm thick.
- Salt all the sticks and let them stand for about 30 minutes in a colander. This step allows the eggplant to lose its bitterness.
- Rinse the sticks and put them in a large bowl. Cover with beer and let stand about 30 minutes again. This step will prevent the eggplant from absorbing too much oil during frying.
- Thoroughly dry the sticks and flour them lightly, shaking them to remove the excess flour.
- In a large skillet over medium-high heat, heat 2 cm of olive oil.
- When the oil is hot, about 170 ° C, deep fry the eggplant sticks until they are golden and brown. Do not fry too many sticks at once, they will cool the oil, frying will take longer and the sticks will absorb lots of oil. It is better to fry them in batches, depending on the size of the pan and the size of the eggplant.
- Let them set on a papel towel for a coupleof minutes and then transfer to the serving dish.
- Just before serving, add some drops of molasses with a teaspoon.
- It’s done. Enjoy!
Sugerencias, trucos y consejos
- You can also cut the eggplant into slices half a centimeter thick.
- You can use a potato chipper, using a blade for 1.2 cm sticks. Also, you can use a mandolin to slice the eggplant into rounds.
- You can use the fryer for this recipe.
- You can use honey instead of molasses. This is not the same, but this is quite good too.
