Custard Tart Recipe

My discovery of the Custard Tart or the flan pâtissier was by chance. As I said in the recipe of rabbit in mustard sauce, I sometimes make mistakes when ordering food. While I ask for recommendations very often, many times I have ordered without knowing exactly what it was, usually when the translation into Spanish is close. But that has brought me some surprises, as the day I order flan for desert and they came with this baked custard tart.

Ingredientes

  • 1 sweet shortcrust pastry ( a quick and simple recipe can be found here )
  • 3 eggs
  • 50 g of cornflour
  • 10 g of regular flour
  • 125 ml of cold milk
  • 375 ml of milk, room temperature
  • 100 g of sugar
  • 1 vanilla bean
  • Butter and flour for greasing
Optional: For the shiny topping:
  • 1 sheet of plain gelatin
  • 2 tablespoons of icing sugar
  • 50 ml of water

Elaboración

  1. Preheat the oven to 180ºC.
  2. In a saucepan, boil the 375 ml of milk, sugar and the vanilla bean opened.
  3. In a bowl, mix the eggs with the flour and cold milk .
  4. When the milk boils, lower the heat and add the egg mixture and stir very well.
  5. Cook a few minutes more, stirring until preparation thickens.
  6. Grease a baking pan with butter and flour, roll in the shortcrust pastry, trim the excess and make holes with a fork all over the surface.
  7. Add the mixture and level with a spatula.
  8. Bake for 50 minutes, in the middle of the oven with heat up and down.
  9. Remove from oven and let it cool.
  10. If you want to put the shiny topping (optional):
    1. Soak the gelatin in cold water for 5 min .
    2. In a saucepan, dissolve the sugar in 50 ml of water and bring to a boil.
    3. Turn off the heat, drain the gelatin and dissolve it in the water.
    4. Let it cool for about 3 to 4 min .
    5. Brush the top of the tart with this preparation.
  11. Refrigerate at least two hours, or overnight before serving.

 

Sugerencias, trucos y consejos

  • You can skip vanilla, or substitute it by 1 sachet of vanilla sugar or 1 teaspoon of vanilla extract.
  • If the surface starts to burn quickly, cover it with a silicone lid or parchment paper.
  • You can use custard mix.
