Chunky Apple Sauce on Speculoos topped with Salted Butter Caramel Recipe

Since I live in Grenoble, I got used to buy fruit always in the same place. It is a little more expensive than other stores or market stalls, but the merchant ensures that the fruit is perfectly ripe and ready to eat. He is absolutely right , and every week I pay him a little visit. I am not disappointed of buying fruits that are not good anymnore. Normally, I buy enough for the whole week and the weekend, with the fruit that I did not eat, I prepare a dessert. For example, with the apples, when I see that I must eat them, I sometimes make a chunky sauce which I accompany with speculoos and I top with salted butter caramel sauce.

Ingredientes

  • 4 apples, peeled, seeded and chopped into chunks
  • 20 g of sugar
  • 100 ml of water
  • 1 cinnamon stick
  • 2 or 3 drops of lemon
  • 12 spéculoos
  • 4 tablespoons of salted butter caramel
  • Slivered almonds to decorate

Elaboración

  1. Prepare the caramel with salted butter sauce (click to see the recipe if you want to prepare it yourself) .
  2. In a saucepan over medium heat , simmer the apple chunks with the water, the cinnamon stick, the sugar and two-three lemon drops, for 15 minutes, until the apple is tender. Remove the cinnamon stick and let it cool.
  3. Place a base of crushed speculoos in the glasses for serving. more or less one or two centimetres thick. It is not necessary to press them to the bottom.
  4. Distribute the chunky apple sauce in the glasses, making a small mound.
  5. Garnish with a good tablespoon of salted butter caramel sauce.
  6. Top with slivered almonds.
  7. Done.

 

Sugerencias, trucos y consejos

  • Beware of lemon. Two or three drops are enough.
  • You can use the biscuits of your choice.
  • You can use toffee instead of caramel with salted butter sauce.
  • You can use pears instead of apples.
  • You can flavor the chunky apple sauce with vanilla instead of cinnamon. Replace the cinnamon by a vanilla bean cut in half in length.
  • You can stieve the apple sauce to obtain a creamier sauce.
  • For gourmands, add a scoop of your favorite ice cream and drizzle with caramel sauce.
  • Why not finish it with a bit of whipped cream ?
