Few years ago, a colleague invited the entire office to his place. We went to dinner with the simple pretext that he had bought a bunch of chanterelle mushrooms in the market. He could not wait any longer to prepare us his chanterelle risotto . Making risotto is very easy. You only must to be aware that you have to add the stock little by little and stir so that the rice starch expands and transforms this dish with its creamy texture and so characteristic of risotto.

Ingredients 400 g of arborio rice 250 g of chanterelles 1 liter of vegetable broth 4 tablespoons olive oil 25 g of butter 50 g grated parmesan Salt
Directions In a saucepan, heat the vegetable broth over medium heat. Keep it warm on low heat for all the preparation. Wash the mushrooms quickly under running cold water. Cut the biggest ones in two or three pieces. Peel and wash the onion. Chop it into strips. In a skillet over medium heat, heat 1 tablespoon of olive oil. When the oil is hot, add the mushrooms and sauté for a few minutes. Reserve with all their juices. In another skillet over medium heat, heat 3 tablespoons of oil. When the oil is hot, add the onion and saute for a few minutes, without browning. Add rice and mix with the onion. Strir fry for 1 minute until its color becomes lighter. Add mushrooms and all their juices and mix well. Add a ladle of hot vegetable stock and stir gently until the rice absorbs the broth. Repeat the previous step until the rice is ready. Sometimes it is not necessary to use the whole amount of broth. The process can take roughly uo to 20 minutes. Check if the rice is cooked to your liking. Remove from heat and mix with cold butter cut into pieces. Stir gently until the butter is incorporated. Then sprinkle the grated cheese and mix well. It is done. Serve immediately. Enjoy!
