BBQ Salmon Salad with Fritos and Cilantro Dressing Recipe

This is the salad in where I discovered the cilantro vinaigrette. For those of you who know me, you will be able to easily guess why ordered it. That is correct, my first night in the U.S. I went out for dinner to the restaurant next to the hotel and I ordered this salad because it had a big steak of BBQ salmon on top.
Although the title of this recipe is quite long, do not be afraid, it is easy and quick to prepare. A mix of several kinds of lettuce on the botton covered with the cilantro vinaigrette, some tomato cubes, red bell pepper cubes, corn, crunchy fritos and, on top, a salmon steak marinated in barbecue sauce and gilled. So good, isn’t it? Plus, this salad is served while the salmon is still warm and the contrast with the rest of cold ingredients is awesome. I really love this salad. It was a nice surprise that night.

BBQ Salmon Salad with Fritos and Cilantro Dressing Recipe

- 4 salmon steaks 200-250 g, skinless
- BBQ sauce
- 200 g of crispy lettuce leaves: batavia, iceberg, escarole… washed and cut into pieces
- 2 or 3 tomatoes, washed and diced
- 150 g of sweet corn
- 1 red bell pepper, washed and diced
- 150 g of fritos
- 20 cl of sour cream (click to see recipe)
- 20 cl of milk (or buttermilk)
- A few drops of lemon and/or lime (to make buttermilk substitute with milk)
- 1 tablespoon of mayonnaise (rather generous)
- 1 tablespoon of vinegar (more or less to taste)
- 1 clove of garlic, peeled, cut in half and without the green part
- 2 tablespoons of finely chopped cilantro
- 1 tablespoon red onion, peeled and finely chopped
- 1 tablespoon of chives , finely chopped
- Salt and pepper
Elaboración
- Prepare the grilled BBQ salmon (click to view recipe).
- At the same time, while the salmon is marinating, prepare the cilantro vinaigrette (click for recipe).
- Grill the salmon and reserve.
- Mix the lettuce leaves with the vinaigrette and place them in the plates.
- Srpinkle tomato dices, corn, red bell pepper and fritos.
- Top each plate with a steak of salmon.
- Done. Serve quickly, while the salmon is warm.
Sugerencias, trucos y consejos
- This salad can be served as main dish. Make half portions to serve it as a starter.
- You can decorate it with some coriander leaves.
- You can use your favorite fritos flavour: plain, barbecue, cheese, hot…
- Try using other ingredients like diced cheedar cheese, green pepper, avocado, surimi, shrimps… and you can even brown a couple of minutes the corn in a skillet over medium heat with a drizzle of olive oil.
- Serve it with the spicy twist of the vinaigrette with a few drops of tabasco.
