Tomato Frito Sauce with Vegetables Recipe

A variant of the tomato sauce that I really like is this recipe for tomato frito with vegetables. I generally prepared it chopping very thinely the vegetables that I mix at the end with a classic “tomato frito” sauce ^[1]. It can be used to accompany a nice piece of meat or even fish, but I prepare to accompany fried eggs with fresh bread to dip in. And you? What would you suggest? Tomato Frito Sauce with Vegetables Recipe

Ingredients

• 1 kg of ripe tomatoes or 800 g of canned tomatoes
• 1 small red bell pepper
• 1 small green bell pepper
• 1 small onion
• 1 garlic clove
• 1 or 2 bay leaves
• Olive oil
• 1 teaspoon of sugar
• Salt and pepper

Directions

1. Wash the tomatoes and remove the stalk. If you use canned tomatoes, this step is not necessary.
2. Cut the tomatoes into small pieces. You do not have to remove the skin and seeds.
3. In a skillet over medium heat, heat 2 or 3 tablespoons of olive oil.
4. When the oil is hot, add the tomatoes, bay leaves and a teaspoon of sugar.
5. Cook over medium-low heat for 25-30 minutes.
6. Meanwhile, wash the peppers, remove the stems, seeds and the white strips if any.
7. Cut the peppers into strips first, then into small squares.
8. Peel and wash onion. Chop it into small squares.
9. In another skillet over medium heat, heat 2 to 3 tablespoons of olive oil.
10. When the oil is hot, add the vegetables and cook over medium heat for 10 to 15 minutes.
11. Peel the garlic and crush it. Add to the vegetables and cook for 2 to 3 minutes more.
12. When the tomato is reduced, remove the bay leaf and sieve using a food mill.
13. Add the tomato puree to the pan with the vegetables. Reduce for about 5 minutes to allow the flavors to blend.
14. It is done. You can serve it cold or hot. Enjoy!

Hints, Tips, and Tricks

• Use this tomato frito with vegetables sauce to mix with boiled rice ^[2] or to accompany meat, like a good steak, meatballs ^[3], chicken breasts, or fish like a tuna steak or as I do, fried eggs.
• You can add other vegetables like carrots or celery.
• You can add spices of your choice, such as oregano, basil, thyme, rosemary …
• For extra flavor, you can add at the end about 100 ml of chicken or vegetable stock. Reduce until thickened.
