Salmon and Grilled Goat Cheese Salad Recipe

How to prepare a delicious warm salad of marinated salmon grilled and goat cheese. It is seasoned with a sweet touch that gives the balsamic vinegar and honey vinnaigrette, which combines perfectly with salmon and goat cheese. I used to prepare this salad by myself in the salad buffet in the restaurant where I had lanch every day a few years ago. Nevertheless, there the goat cheese was not grilled, but now when I make this salad at home I love the brown it, as I really love the flavour and creamy texture of hot cheese. And you? Salmon and Grilled Goat Cheese Salad Recipe

Ingredients

• Marinated salmon ^[1]
• 1 fresh goat cheese log
• Mesclun
• Lam’s lettuce
• Walnuts
• Croutons ^[2]
For the dressing:
• Extra virgin olive oil
• Balsamic vinegar
• Honey
• Salt and pepper

Directions

1. First, put the goat cheese log in the freezer for at least half an hour to facilitate slicing it later.
2. Wash the mesclun and lamb’s lettuce thoroughly. Dry them using a salad spinner.
3. Place a base of mixed greens on serving plates.
4. Add some nuts and croutons.
5. Arrange the slices of marinated salmon on top.
6. Cut the goat cheese into slices and allow them to warm.
7. Prepare the dressing: In a glass jar, add 5 or 6 tablespoons of olive oil, 2 or 3 tablespoons of balsamic vinegar, 1 teaspoon of sugar, salt and pepper to taste. Close it tightly and shake it vigorously until blended.
8. In a hot pan over medium-high heat, grill the slices of goat cheese for 1 minute on each side. Place 2 or 3 slices on each plate.
9. It is done. Serve immediately, so that the goat cheese does not get cold. At the table, let each guest to season their salad. Enjoy!

• The quantities of marinated salmon, salad and goat cheese in the recipe are left to your choice.
• Use your favorite green salads: romaine, iceberg lettuce, oak leaf, or even spinach and / or rocket.
