Todavía no he probado esa manera de cocinar el pato de empezar desde frío, pero me llama mucho la atención. Supongo que, con lo que me costó dar con el punto (cuántos magrets demasiado crudos, demasiado hechos, y cuantas veces habremos encendido el horno en el último momento para terminar ahí), me cuesta probar una forma nueva. Pero la próxima vez que lo haga, tengo pendiente usar ese método.
