I never liked chickpeas. When I was a child it was one of the dishes that I could not even see in a photo. I remember one day when my mother found a similar one recipe in a magazine and asked me: “If I prepare chickpeas like that, would you eat them?” I told her: “Try and we will see.” And here is the first dish made of chickpeas that I ate without even complain at all when I was a kid.
Chickpeas, Sardines and Peppers Salad Recipe Average Rating:

Ingredients To cook the chickpeas: 200 g of chickpeas 1 large carrot 1 leek 1 turnip 1 bay leaf 1/2 red bell pepper 1/2 green bell pepper 1/2 red onion 12 cherry tomatoes 1 tin of sardines fillets in oil blend Chopped parsley Extra virgin olive oil Sherry vinegar Salt and pepper Sesame seeds, for sprinkling
Directions Soak the chickpeas in cold water at least 8 hours in advance. Place the chickpeas in a pressure cooker with half a liter of water. Add the carrot, peeled and cut into two pieces, the leek washed and halved without the green part, the turnip, peeled and cut into wedges and the bay leaf. Once the water starts to boil, add another half a liter of cold water. This stop the first boiling of chickpeas and it makes it easier to digest them. Close the pressure cooker and cook for about 30 minutes since the steam starts coming out. Drain the chickpeas and leave them to cool, stirring gently from time to time so they do not dry out. Wash the cherry tomatoes and cut into wedges. Wash the bell peppers, remove the seeds and the white parts and chop them. Peel, wash and cut the onion into the smallest pieces you can. Drain the sardine fillets. Wash the parsley, dry, form a ball and chop finely. Mix bell peppers, tomato and onion with chickpeas and chopped parsley and sardines. Sprinkle sesame seeds on top. Season the salad to your liking with olive oil, vinegar, salt and pepper. I like 3 tablespoons of oil, 1 of vinegar, a pinch of salt and a pinch pepper. It is done. Enjoy!
Hints, Tips, and Tricks You can add other ingredients to the salad as green onions instead of red onion, a boiled egg or even substitute sardines by tuna in oil blend. You can use a can of chickpeas, instead of cooking them yourself. In this case, rinse them well and continue the recipe from step 6.
